Traditional Italian-style espresso coffee is brewed in Cafe Lotti’s gleaming, fire-engine red, Italian-crafted La Marzocco espresso machine. La Marzocco has a double boiler, one to heat the water and one for the steam. For the optimum espresso drink, the water should be 205 degrees, and most single boilers can’t get near this temperature, leading to weaker coffee.

You might hear Johnny and the Cafe Lotti team affectionately refer to La Marzocco as Dorothy. The grinders, which are more temperamental, have been named after the spooky twins in The Shining, Lisa and Louise.
